Mango sambar is a tangy sambar recipe made with raw mangoes and south indian spices. It is a very popular recipe in South India especially in Tamil Nadu. You can add drumsticks or small onions also along with the mangoes for a more flavourful sambar. I have added jaggery too in this sambar as it balances the sourness from the mangoes. Mango sambar is a best accompaniment for steamed rice. You can also serve mango sambar with idlis and dosas.

INGREDIENTS
Raw mango – 1 small
Toor dal – 1/3 cup
Tamarind – one small lemon sized
Sambar powder – 1 and half teaspoons
Oil – 2 tablespoons
A pinch of asafetida or hing
Chana dal – 1 teaspoon
Red chillies – 2 (broken into pieces)
Few curry leaves
Mustard seeds or rai – 1/2 teaspoon
Methi seeds – 1/4 teaspoon
Jaggery powder – 1/2 teaspoon (optional)
Coriander leaves for garnishing
Salt to taste
HOW TO MAKE OR PREPARE MANGO SAMBAR RECIPE
PREPARATION
Wash thoroughly the mango and chop them into medium pieces. Keep it aside.
Soak the tamarind in hot water for 15-20 minutes. Then extract the tamarind juice and make 2 cups of tamarind water.
Pressure cook the toor dal with sufficient water and turmeric powder for 4 whistles or till it is soft. Once cooled down, mash the dal and set aside.
METHOD
Heat a kadai or non-stick pan and add mustard seeds. Once it starts spluttering, add hing, methi seeds, chana dal and red chillies. Saute till the dal turns golden brown in colour. Then add the chopped mangoes and mix well. Cook on a low flame for 2-3 minutes.
Then add the tamarind water and salt. Boil for another 3-4 minutes till the raw smell of the tamarind goes away. Mangoes also will get cooked and become slightly soft. Now add sambar powder and mix well.
Add 1/2 a cup of water and mix. Add the mashed tur dal and 3/4 cup of water. (add water as per the consistency required by you).
Simmer the sambar for 3-4 minutes or till the sambar thickens slightly. Add salt here, if required. Garnish with chopped coriander leaves. Switch off the flame. Mango sambar is now ready to be served with rice and any dry vegetable.
NOTES/TIPS
Soak the tur dal for half an hour to 45 minutes. It helps to cook the dal faster.
You can add drumsticks or onions along with mango for making this sambar.
Use only raw mangoes for making this sambar.
