Green peas soup recipe

Green peas are winter crops and fresh peas are easily available in the market  from December till March end.  Green peas are one of the most nutritious vegetable  rich in  minerals, vitamins and anti-oxidants and they are also low on calories. While shopping for green peas look for fresh pods that are full, heavy in hands and brimming with seeds. Avoid those with wrinkled surface, or over-matured, yellow color pods.  Peas mix well with other vegetables like potato, carrot, beets,onion, etc in the preparation of a wide variety of dishes.  Green peas soup is not only a comforting soup during winter but it is also very healthy.  Do try this vibrant colored green peas soup this winter and enjoy…

INGREDIENTS

Fresh green peas – 1 cup

Onion – 1 (medium sized chopped roughly)

Garlic cloves – 2-3

Black pepper powder – 1/2 teaspoon

Corn flour – 1 teaspoon

Butter  – 2 tablespoons

Salt to taste

 

HOW TO MAKE/PREPARE FRESH GREEN PEAS SOUP RECIPE

Take the cornflour in a small bowl and add half a cup of water to it.  Mix it well and keep aside.

Heat 1 tablespoon of butter in a  pressure pan, add chopped onions, garlic cloves and saute till onions become translucent.

Add green peas and 2 cups of water and pressure cook upto 3 whistles or until soft.

Once the pressure is released, blend the mixture to a smooth puree.  Strain the mixture with the help of a strainer.  Set the green peas puree aside.

Heat another 1 tablespoon of  butter in a pan.  Add the green peas puree and cornflour water.  Add salt and black pepper powder and mix well.  Cook on a’ low flame and bring it to a boil.  (If you desire a thin consistency soup, you can add little water to it accordingly and then boil).

Cook for 2-3 minutes on a low flame till it is well combined and comes to a little thick consistency.  Then switch off the flame.

Green peas soup is now ready to be served.  Top the soup with fresh cream and serve hot.

NOTES/TIPS

Ensure to use fresh green peas when in season.  Otherwise you can also use frozen green peas for making the soup.
