Mixed dal fry or panchmel dal is a dal recipe made with 5 different lentils/dals. Panch means five and this dal is a very popular dish from Rajasthan cuisine. This mix of dals packet is easily available in most of the supermarkets in India. The flavours of all the dals along with the spices gives a nice and strong aroma to the dish. INGREDIENTS
TO BOIL
Mix dals/lentils – Toor dal (tuvar or arhar), chana dal (split bengal gram), masoor dal (split red lentils), black urad dal (split black gram or black lentils) and moong dal (split green gram) – 1 cup
Water – 2 and 1/2 cups
Turmeric powder – 1/4 teaspoon
FOR TADKA/SEASONING
Ghee or cooking oil – 2 tablespoons
Mustard seeds/rai – 1/2 teaspoon
A pinch of asafetida or hing
Cumin seeds/jeera – 1/2 teaspoon
Bay leaf – 1
Cinnamon stick (dalchini) – 1/2 inch piece
Cloves (laung) – 2
Dry red chillies – 2
Green chillies – 2
Curry leaves – 6 to 7
Onion – 1 (medium sized chopped finely)
Tomatoes – 2 (medium sized chopped finely)
Ginger-garlic paste – 1 teaspoon
Red chilli powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Kasoori methi leaves – 1 teaspoon (crushed)
Chopped coriander leaves for garnishing
Salt to taste
HOW TO MAKE OR PREPARE MIX DAL FRY RECIPE
Wash the mixed dals/lentils thoroughly. Then soak them in 2 and 1/2 cups of water for about an hour. Soaking the dals helps to cook faster.
Add turmeric powder and pressure the soaked dals for upto 4 to 5 whistles or till fully cooked. Once the pressure cools down, mash the dals slightly with the back of a ladle or spoon. Keep it aside.
Heat ghee in a pan on medium flame. Add hing, bay leaf, cloves, cinnamon stick and cumin seeds and saute for 30 seconds.
Add chopped onions, curry leaves, ginger-garlic paste, green chillies and red chillies and fry till the onions become translucent and ginger-garlic smell goes away. Then add chopped tomatoes and mix well.
Cook on a low to medium flame till the tomatoes become little soft. Then add coriander powder, red chilli powder and salt. Mix well.
Add the boiled dal and give a good mix.
Close the pan with its lid and simmer for 10 minutes on a low flame. Finally add kasoori methi and garam masala. Stir well.
Check for salt and add if required. Cook on a low flame for 1-2 minutes. Garnish with chopped coriander leaves. Switch off the flame.
Delicious and healthy protein rich mix dal is ready to be served. Serve panchmel dal hot with steamed rice, jeera rice or rotis.
NOTES/TIPS
You can add little amchur powder to a give a tangy twist to the dal.
Use ghee instead of oil as ghee gives a better taste and flavor to the dal.
Ensure to soak the lentils for a minimum of 45 mins to 1 hour or else the lentils will not be cooked well.
