Multigrain thepla (multigrain roti) recipe – Healthy breakfast recipe
Multigrain thepla is a healthy and very nutritious breakfast dish prepared from wheat flour, ragi flour, bajra flour, jowar flour and besan and mixed with fenugreek leaves and mild spices. It is an ideal food or snack to start the day energetically. Methi thepla is a favourite Gujarati roti. You can use fresh fenugreek leaves to make this roti. But if fenugreek leaves are not available, you can substitute with dry kasoori methi leaves. I have prepared the thepla using dry kasoori methi leaves as I wanted to try thepla using kasoori methi leaves too. It tastes good and delicious even with kasoori methi. Multigrain thepla goes well with curd or pickle or garlic chutney. Do try this multigrain thepla to get the benefits of high fibre and more nutrition.

INGREDIENTS
Wheat flour – 1 cup
Ragi (finger millet) flour – 1/4 cup
Bajra (pearl millet) flour – 1/4 cup
Jowar (sorghum) flour – 1/4 cup
Bengal gram flour (besan) – 1/4 cup
Red chilli powder – 3/4 teaspoon
Turmeric powder – 1/4 teaspoon
Coriander powder – 1 teaspoon
Cumin powder – 1/2 teaspoon
Sesame seeds (til) – 1/2 teaspoon
Dry kasoori methi leaves – 1/4 cup
Salt to taste
Cooking oil for shallow frying
HOW TO MAKE OR PREPARE MULTIGRAIN THEPLA RECIPE
Take a mixing bowl. Add wheat flour, ragi flour, bajra flour, jowar flour and besan and mix well. Then add red chilli powder, turmeric powder, coriander powder, cumin powder, til, kasoori methi leaves and salt and give a good mix.
Add little water and knead into a soft dough. Keep aside for 15-20 minutes.
Make small equal balls of the dough. Put a plastic sheet on the rolling board. Smear oil on the plastic sheet. Wet your hand and pat the balls into round circle on the plastic sheet. Alternatively, you can also roll them with a rolling pin into a round shape with the help of dusting with little flour. Heat a pan or tawa on a medium flame. Smear some oil on the tawa. Put the thepla and cook on both the sides till light brown smearing it with oil on both the sides.
Serve multigrain thepla hot or warm with curd, butter or any chutney of your choice.

You can substitute methi leaves with grated cabbage or carrot or chopped spinach to make it more nutritious
