Baby corn masala curry
A spicy and tasty dish made with baby corn pieces and spices cooked in a masala gravy.
Ingredients
- Baby corn – 3 cups (cut into small round pieces)
- Onions -2
- Tomatoes - 4
- Green chillies – 4 nos (chopped finely)
- Mustard seeds – 1 teaspoon
- Garlic cloves – 10
- Ginger – a small piece
- Cumin seeds – 1 teaspoon
- Red chilli powder – ½ teaspoon
- Coriander powder – 1 teaspoon
- Cumin powder – 1 teaspoon
- Turmeric powder – ¼ teaspoon
- Garam masala powder – 1 teaspoon
- Salt to taste
- Sugar – 1 teaspoon (optional)
- Few coriander leaves
- Oil – 4 tablespoon
Method
Step 1
Boil baby corn pieces with water and salt added to it for 10 to 15 minutes
Step 2
Boil the onions and tomatoes in a vessel till they become tender
Step 3
Grind boiled onions, tomatoes, garlic cloves, ginger into a smooth paste and keep aside.
Step 4
Heat oil in a pan. Add mustard seeds, cumin seeds and when it splutters, add chopped green chillies, ground puree and cook for a minute.
Step 5
Add red chilli pdr, turmeric pdr, coriander pdr, cumin pdr, garam masala and stir till well mixed.
Step 6
Add boiled baby corn pieces and cook for 2 to 3 minutes with the lid closed on a low flame.
Step 7
Add sugar and mix well.
Step 8
Garnish with coriander leaves. Serve hot with rotis, naan or bread.
