Vegetable tikki or veg cutlet recipe – How to make vegetable tikki recipe – Indian snacks

Vegetable tikki is  a tasty tea-time snack  which can be made quickly at home with the ingredients easily available at home. Tikki is also called as cutlet which is either deep fried, shallow fried or baked. It makes up for a great snack for kids as well as elders.   You can also deep fry the cutlets instead of shallow frying, but shallow frying absorbs less oil. Veg cutlet is best served with green chutney, tomato ketchup or green mint chutney.

INGREDIENTS

Grated bottlegourd/lauki – 1/2 cup

Grated carrot – 1/4 cup

Grated or mashed boiled potato – 1/2 cup

Onion – 1 medium sized (chopped into small pieces)

Green chillies – 2 (chopped into pieces)

Red chilli powder – 1/4 teaspoon

Chat masala – 1/4 teaspoon

Garam masala – 1/4 teaspoon

Corn flour – 4 tablespoons

Chopped coriander leaves – 1 tablespoon

3 to 4 tablespoons of oil for shallow frying the tikkis

Salt to taste

HOW TO MAKE OR PREPARE VEGETABLE TIKKI RECIPE

PREPARATION

Grate the carrot and lauki.  Squeeze the excess water from the grated lauki.

Boil one small potato. Once cooled down, peel the skin and mash the potato.  Keep it aside.

METHOD

Take a vessel or a bowl.  Add grated carrot, boiled and mashed potato, green chillies, chopped coriander leaves, chat masala and garam masala.  Mix everything well by hand.  Lastly add salt and corn flour. Mix again well.

Divide the mixture into equal portions and shape into a cutlet.

Heat little oil in a pan on a medium flame for shallow frying.  Grease the oil in the pan evenly.  Shallow fry the cutlets on both the sides till they turn golden brown in colour. Once done, remove them in an absorbent paper to remove the excess oil.

Serve the veg tikki  hot or warm with green chutney or tomato ketchup.

NOTES/TIPS

You can also add bread crumbs or maida instead of corn flour for binding the mixture.

After adding salt, prepare the tikkis immediately or else the mixture tends to become watery.

You can add veggies like green peas, carrot and french beans too for making this tikki.  Boil the veggies till done and drain the excess moisture if any and add the spices.
