Sprouted green gram curry is made from moong sprouts, onions, tomatoes, coconut and spices. This curry goes well with rice as well as rotis. This curry is also called as mugachi usal and a very popular dish in Maharashtra. Sprouted green moong is high in proteins, low in calories and full of fibre. Coconut when added to this dish, gives a good taste and flavour to the curry. If you do not have dry coconut, you can use freshly grated coconut for making this curry. Do try this green gram curry which is similar to a home cooked dal.

INGREDIENTS
Green moong sprouts – 2 cups
Onion – 1 (chopped finely)
Tomato – 2 (chopped finely)
Oil – 2 tablespoons
A pinch of asafoetida or hing
Mustard seeds or rai – 1/2 teaspoon
Cumin seeds/jeera – 1/2 teaspoon
Few curry leaves
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1/2 teaspoon
Coriander powder – 1/2 teaspoon
Goda masala – 1 teaspoon
Chopped coriander leaves – 2 tablespoons
Salt to taste
FOR GROUND MASALA PASTE
Oil – 1 tablespoon
Onion – 1 (chopped roughly)
Garlic cloves – 5
Chopped ginger – 1 teaspoon
Green chillies – 2
Dry coconut or copra – 2 tablespoons
HOW TO MAKE OR PREPARE GREEN GRAM DAL RECIPE
Heat 1 tablespoon of oil in a pan on medium flame. Add roughly chopped onions, green chillies, garlic cloves, ginger and dry coconut.
Saute on medium flame till the onions become translucent in colour. Then switch off the flame.
Once cooled down, grind the mixture with little water to make a smooth paste. Keep the ground masala aside.
To the same pan, add 2 tablespoons of oil. Once the oil becomes hot, add mustard seeds, cumin seeds and hing.
Once the seeds stops spluttering, add curry leaves and finely chopped onions. Saute till the onions become slightly brown in colour.
Add chopped tomatoes. Mix well and cook till the tomatoes becomes soft.
Once the tomatoes becomes soft, add turmeric powder, red chilli powder, coriander powder, goda masala and salt. Mix well again. Cook on a low flame for 1 minute.
Add the ground masala paste with 1/4 cup of water. Cook on a low flame for 2-3 minutes, till the masala gets cooked well. Then add 2 cups sprouted green moong and mix well.
Add 3 cups of water and mix well till you get the required consistency.
Cover the pan with its lid and cook on a low flame for 10 minutes or till the moong sprouts are cooked well.
Once cooked, garnish with chopped coriander leaves. Switch off the flame. Tasty and healthy green gram curry is ready to be served. Serve with rice or roti.
NOTES/TIPS
Adjust the consistency of the curry as required by you.
You can add garam masala instead of goda masala.
You can make matki or moth beans instead of sprouted green moong, using this recipe.
If you do not have dry coconut or copra, you can use freshly grated coconut.
