Aloo masala recipe
Aloo masala is a very delicious side dish made with potatoes in tomato gravy and simmered with mild spices. It goes well with rotis, puris or parathas. Enjoy this spicy, mouth watering and popular North Indian dish which is also quick and easy to make.
Ingredients
- Potatoes - 4 to 5 (medium sized)
- Tomatoes - 4
- Cooking oil - 2 tablespoons
- Mustard seeds - 1/2 teaspoon
- Cumin seeds - 1/2 teaspoon
- Green Chillies - 2
- Ginger-garlic paste - 1 teaspoon
- Coriander powder - 1 teaspoon
- Red chilli powder - 1/2 teaspoon
- Garam masala - 1 teaspoon
- Salt to taste
- Chopped coriander leaves - 2 tablespoons
Method
Step 1
HOW TO MAKE ALOO MASALA RECIPE Wash the potatoes thorougly and boil them with sufficient water in a vessel till they are soft. Alternatively, you can pressure cook the potatoes upto 4 whistles.
Step 2
Once cooled, peel the potatoes and cut them into medium pieces and set aside.
Step 3
Grind the tomatoes to a smooth puree and keep aside.
Step 4
Heat oil in a pan. Add asafoetida and mustard seeds, Once the seeds start spluttering, add cumin seeds and stir fry for half a minute.
Step 5
Add green chillies, ginger-garlic paste and cook till the raw smell goes away.
Step 6
Add tomato puree and mix well. Saute until oil starts appearing on the sides.
Step 7
Add turmeric powder, salt, coriander powder and red chilli powder and mix well. Add boiled potato pieces and combine together. Simmer for 3-4 minutes on a low flame.
Step 8
Add garam masala and coriander leaves and mix well. Switch off the flame. Take out the sabzi in a serving bowl and serve hot. Spicy and delicious aloo masala is ready to be served.
Step 9
Serve aloo masala sabzi hot with rotis, puris or parathas.
