White pumpkin huli or white pumpkin sambar recipe

White pumpkin huli or sambar is a south indian curry made with white pumpkin and lentils.  It is also called as poosanikai sambar in Tamil nadu.  It is a popular accompaniment for rice, idlis, dosas or vadas and is a common dish in every south indian homes.

Ingredients

  • Tur dal - 1 cup
  • Tamarind water - 1/4 cup
  • White pumpkin - 150 gms
  • Mustard seeds - 1 teaspoon
  • 1 string of curry leaves
  • Coriander seeds - 4 teaspoons
  • Chana dal - 1 teaspoon
  • Methi seeds - 1/2 teaspoon
  • Whole red chiilies - 5 to 6 nos
  • Grated coconut - 1/4 cup
  • Salt to taste
  • A pinch of asafoetida
  • Oil - 1 teaspoon

Method

Step 1

HOW TO MAKE WHITE PUMPKIN SAMBAR Heat 1 teaspoon of oil in a pan. Stir fry coriander seeds , chana dal, methi seeds, red chillies till light brown. Add grated coconut and saute for 15 seconds. Remove from heat. Grind all the ingredieints with little water to make a smooth paste.

Step 2

Cut the white pumpkin into medium pieces about 2 inch long and boil with little water till they become soft.

Step 3

Boil tur dal with enough water and turmeric in a pressure cooker upto 4 whistles. Alternatively, you can boil in a separate vessel with water till soft. Mash the dal and keep aside

Step 4

For tamarind water, you can soak tamarind in water for 30 minutes and take pulp out of it. Alternatively, you can boil tamarind in water for 5 to 7 mins. Once it cools down, you can easily take pulp out of it.

Step 5

Heat a heavy bottomed pan. Add tamarind water. Let it boil for 2 to 3 minutes till the raw smell goes away

Step 6

Add the ground masala and salt. Cook for 2 minutes on a low flame.

Step 7

Add boiled tur dal and white pumpkin. Add little water and bring to a medium consistency. Mix well and cook for another 5 mins on a medium flame. Remove from heat,

Step 8

Give seasoning with mustard seeds, asafoetida and curry leaves. .

Step 9

Serve white pumpkin sambar hot with rice, idlis or dosas.
