Pudina rice or mint flavoured rice is a flavourful rice dish made with rice, pudina leaves and spices. This rice dish is very refreshing and tasty and can be had on its own or accompanied with raita, plain curd or any simple curry. Pudina pulao also makes up for an ideal lunch box dish as it is not only easy but can be made quickly too. Besides pudina leaves, also coconut, coriander leaves, ginger, garlic and green chillies are added to give a nice spicy and delicious flavour to this rice dish.

INGREDIENTS
Basmati rice – 1/2 cup
Water – 1 cup
Onion -1 (chopped into long pieces)
Tomato – 1 (chopped into medium pieces)
Green peas – 2 tablespoons – (frozen or fresh peas)
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1/4 teaspoon
Salt as per taste
TO GRIND TO A SMOOTH PASTE
Pudina/mint leaves – 1/4 cup
Coriander leaves – 1/4 cup
Coriander seeds – 1 teaspoon
Garlic cloves – 5
Ginger/adrak – 1/2 inch sized roughly chopped
Coconut – 1/4 cup (grated or chopped pieces)
Green chillies – 2
FOR SEASONING
Ghee or cooking oil – 2 tablespoons
Cumin seeds or jeera – 1/4 teaspoon
Star anise – 1
Cloves or lavang – 2
Small cardamom – 1
Tejpatta or bay leaves – 1
HOW TO MAKE OR PREPARE PUDINA RICE RECIPE
Wash and soak the basmati rice for half an hour. Then drain the water and keep the rice aside. Grind the pudina leaves, coriander leaves, coriander seeds, garlic cloves, ginger and green chillies with little water to a make a smooth paste.
Keep the ground paste aside. Heat the ghee or oil on medium flame in a small pressure cooker. Add cumin seeds, star anise, cloves, bay leaves and cardamom and stir fry for a minute or two.
Now add chopped onions and saute till they become translucent. Then add chopped tomatoes and cook till the tomatoes become little soft.
Once the tomatoes are cooked, add the ground paste and mix well. Add red chilli powder and turmeric powder and mix again. Cook for another 2 minutes on a low flame.
Add the green peas and combine together
Add 1 cup of water and salt. Close the pressure cooker with its lid and cook for 2 whistles. Once the pressure is cooled down, gently fluff the rice and transfer to a serving bowl.
Serve healthy pudina rice or pudina pulao hot or warm with papad, raita or as a light lunch or dinner.
NOTES/TIPS
You can also add little garam masala for an enhanced flavour.
You can cook this rice dish in an open pan on a low to medium flame, till the rice is completely cooked.
Amount of water added to cook the rice will depend on the age and type of the rice. Hence add water accordingly.
