HOW TO MAKE OR PREPARE PUDINA RICE WITH VEGETABLES RECIPE

Wash and soak the basmati rice for half an hour.  Then drain the water and keep the rice aside.  Grind the pudina leaves, coriander leaves,  garlic cloves, ginger, coconut, onion and green chillies with little water to a make a smooth paste.

Keep the ground paste aside.  Heat ghee  or butter on medium flame, in a small pressure cooker.

Once the ghee becomes hot, add cumin seeds, star anise, cloves, black peppercorns, bay leaves and cardamom and stir fry for a minute, till you get a nice aroma.  Add chopped onions and saute on a low to medium flame.

Then add chopped tomatoes and cook till the tomatoes  become little soft.  Now add chopped potatoes and carrots.

Mix well.   Add the ground paste and mix again.  Add the soaked rice.

Add water and stir gently without breaking the grains.  Add turmeric powder.  Mix well.

Close the pressure cooker with its lid and pressure cook for 2 whistles on medium flame.  Once cooled down, gently fluff the rice and transfer to a serving bowl.

Serve healthy pudina rice or pudina pulao hot or warm with papad, raita or as a light lunch or dinner.
