Carrot payasam or carrot kheer
Carrot payasam or carrot kheer is a healthy dessert made with grated carrot, milk and sugar. It is very simple to make and full of nutrition. Grated carrot is cooked in milk and garnished with cashewnuts and raisins. Carrot kheer tastes delicious hot or chilled.
Ingredients
- Carrot - 2 large sized (grated)
- Milk - 1/2 litre
- Sugar - 1/2 cup
- Condensed milk - 1/4 cup
- Cardamom powder - 1/4 teaspoon
- Ghee - 2 tablespoons
- Cashewnuts - 10
- Raisins - 10
Method
Step 1
HOW TO MAKE CARROT PAYASAM OR CARROT KHEER RECIPE Peel the skin of carrots and grate them finely. Keep aside.
Step 2
Heat ghee in a pan. Add cashewnuts and raisins and stir fry till light brown and set aside.
Step 3
In the same pan, add grated carrot and saute them well till the raw smell goes away.
Step 4
Add milk and mix well. Boil milk on a low flame.
Step 5
Cover the pan with a lid and simmer for 10-15 minutes, stirring in between, till the carrot is fully cooked.
Step 6
Now add sugar, condensed milk and cardamom powder and mix well. Mix well and cook for another 2 minutes on a low flame till the sugar is fully dissolved.
Step 7
Remove from flame and transfer to a serving bowl.
Step 8
Serve carrot kheer hot or chilled.
Step 9
NOTES: You can adjust the sugar content, according to sweet taste desired by you.
