Sweet potato is a starchy root vegetable which is full of nutrients and vitamins.  They do not take much time to cook and tastes delicious when cooked with spices.  Sweet potatoes are high in Vitamin B6 and a good source of potassium, Vitamin C and D.   They  contain iron and support a healthy immune system and protect against the effects of aging.  Sweet potato curry is a simple accompaniment to steamed rice or rotis.  This curry has a mild sweetness and goes well with dal rice or sambar rice too.

Indian cuisine

INGREDIENTS

Sweet potato – 3 cups (peeled and cut into small cubes)

Onion – 1 (chopped finely)

Tomatoes -2 (chopped finely)

Green chillies – 2 (chopped finely)

Ginger-garlic paste – 1 teaspoon

Turmeric powder – 1/4 teaspoon

Red chilli powder – 1/2 teaspoon

Coriander powder – 1 teaspoon

Garam masala – 1/2 teaspoon

Oil – 2 tablespoon

A pinch of asafoetida or hing

Mustard seeds or rai – 1/2 teaspoon

Cumin seeds or jeera –  1/2 teaspoon

Chopped coriander leaves for garnishing

Salt to taste

HOW TO MAKE OR PREPARE SWEET POTATO CURRY RECIPE

Heat oil in a pan.  Add mustard seeds and cumin seeds and allow them to splutter.  Add chopped onions, green chillies and ginger-garlic paste.  Saute till the onions become translucent and raw smell of the ginger-garlic paste goes away.

Add chopped tomatoes and salt.  Mix well.  Cook on a low flame till the tomatoes become soft and mushy.  Then add chopped sweet potatoes and turmeric powder.  Mix well.

Add 1 cup of water and close the pan with a lid.  Cook on a medium flame till the sweet potatoes become tender and fully cooked.   Add red chilli powder, coriander powder and garam masala.  Mix well.

Cook for another 2 minutes on a low flame till all the spices are well absorbed by the sweet potatoes.   Check for salt and add if required.   Switch off the flame.  Garnish with chopped coriander leaves.

Delicious sweet potato curry or subzi is ready to be served.  Serve this curry with rotis or dal rice.

NOTES/TIPS

You can add amchoor powder instead of tomatoes, if you want a little dry version of the curry.

You can boil or steam the sweet potatoes and then make the subzi.  In that case, you can reduce the quantity of water added to the vegetable.

Sweet potatoes darken upon contact with the air.  So they have to be cooked immediately after peeling and cutting them to prevent oxidation.  Keep them in a bowl with water until you are ready to cook them.
