Amla rice or gooseberry rice is one of the easiest but also healthiest dish made with amla and rice. Amla is an excellent source of Vitamin C and hence it helps boost your immunity, metabolism and prevents viral and bacterial ailments, including cough and cold. It also helps in slowing down the ageing process, keeps hair healthy and supports the immune system. Amla is undoubtedly a powerhouse of nutrients. Whether eaten raw, juiced, powdered or just added to your jams, pickles or spreads, adds up to an overall good health. Do include gooseberry in your daily diet for more health benefits.

INGREDIENTS
Amla or gooseberry – 4 nos.
Cooked rice – 2 cups
Salt to taste
FOR THE SEASONING/TEMPERING
Ghee/oil – 2 tablespoons
A pinch of asafoetida or hing
Mustard seeds or rai – 1/2 teaspoon
Urad dal – 1/2 teaspoon
Chana dal – 1/2 teaspoon
Peanuts – 2 tablespoons
Cashewnuts – 10 (optional)
Green chillies – 3 to 4 (chopped vertically)
Turmeric powder – 1/4 teaspoon
Grated coconut – 1/4 cup
Chopped coriander leaves – 2 tablespoons
HOW TO MAKE OR PREPARE AMLA RICE OR NELLIKAI CHITRANNA RECIPE
Wash the gooseberries well and grate them with the help of a grater. Discard the seeds.
Heat ghee or oil in a pan. Add hing and mustard seeds and allow the seeds to splutter. Then add urad dal, chana dal, peanuts and cashewnuts and saute till they turn golden in colour.
Add grated amla, green chillies, turmeric powder, coconut and salt. Mix well and cook on a low flame for upto 2 minutes.
Then add chopped coriander leaves and stir for few seconds. Switch off the flame. Add the cooked rice and mix gently. Check for salt and add if required.
Delicious and healthy amla rice is ready to be served. Transfer to a serving plate and serve hot with papads, potato chips or just plain as it is.
NOTES/TIPS
Ensure that the cooked rice is not too mushy and grains are little separate from each other. You can also use leftover rice too for this recipe.
Adjust amla as required. Since amla is very sour, add it to rice accordingly.
Add curry leaves and grated ginger for an enhanced flavour.
Use ghee or sesame oil for best flavour.
