Misal pav recipe – Maharashtrian style
Misal pav is a tradional and popular Maharashtrian dish. It consists of spicy curry made from sprouted moth beans (matki) called as ussal. There are other variations of ussal like chana ussal, green peas ussal , val ussal and chawli ussal. This dish is finally topped with farsan or sev (Indian noodles), onions, chopped coriander leaves and lemon juice. Misal is served with pav or Indian bread. There are different versions of Misal pav such as Kolhapuri misal, Puneri misal and Nagpuri misal. Also there are various types of misal like sev misal and dahi (yoghurt) misal. Misal pav can be had as a breakfast dish or simply enjoyed as a snack. It is a delicious dish and makes up for a wholesome meal.
Basundi recipe
Basundi is a popular Indian dessert in the States of Maharashtra, Gujarat and Karnataka and it is made from milk, sugar and nuts. It is a sweetened dense milk prepared by boiling milk on low heat till it is reduced to half. Once the milk is reduced, sugar and nuts are added to it. Cooking the basundi after sugar is added gives a nice light pink colour to it. Basundi is best served warm or chilled garnished with almonds and pistachios. Here I have prepared basundi without nuts which also tastes divine. Keep stirring the milk continuously and scraping the sides of the vessel as this makes the basundi thick and gives a creamy texture to it. Basundi is ideal for occasions like Diwali or Navratri or any special occasions.
Brown rice kheer (payasam) with jaggery recipe
Brown rice kheer or payasam is a very healthy kheer or payasam made with brown rice and jaggery and garnished with cashewnuts and raisins. Brown rice is very rich in fibre and jaggery is full of iron. This kheer is absolutely delicious when served chilled and very easy and quick to make too. Sprouted green gram (moong) pakora recipe
Sprouted moong pakoras is a quick and easy snack or pakora recipe made with sprouted green moong. It is a healthy, crunchy and delicious teatime snack which is best enjoyed with green chutney or tomato sauce. Sprouted moong is very rich in proteins, fibre and other nutrients. Adding curry leaves and ginger gives a nice aroma and taste to the pakoras, You can either the sprout the green moong at home or it is readily available in small packets in the super markets. You can use these for making instant and healthy pakoras when you have unexpected guests at home or simply enjoy them with your family as a teatime snack.
Pepper rasam recipe
Pepper rasam or milagu rasam is a very comforting and ideal rasam to be served during cold season. It is made with black peppercorns, tomatoes, tamarind, cumin seeds and red chilles and is best served as plain or accompanied with steamed rice. Pepper rasam is a good remedy for cold and fever. It is not only healthy but also very easy to prepare too. I have a given a tangy twist to the rasam by adding little tamarind.
