French beans stir-fry or beans poriyal is a simple and quick South Indian dish made with french beans, urad dal, whole red chillies and grated coconut. This vegetable dish is not only tasty but healthy too with minimum oil used in its preparation. French beans stir-fry goes well as a side dish with steamed rice and sambar/rasam. It is also a no-onion no-garlic and a vegan recipe.

INGREDIENTS
French beans – 250 gms
Cooking oil – 2 tablespoons
Mustard seeds or rai – 1/2 teaspoon
Urad dal – 1/2 teaspoon
Whole red chillies – 2 to 3
A pinch of asafoetida or hing
Few curry leaves
Turmeric powder – a pinch
Grated coconut – 3 tablespoons
Salt to taste
HOW TO MAKE OR PREPARE FRENCH BEANS STIR-FRY RECIPE
Wash/rinse the french beans in running water in a colander and drain them. Cut the side strings of the beans and discard them. Chop the beans into small pieces and set aside.
Heat oil in a pan on medium flame. Add mustard seeds and allow them to splutter. Then add urad dal and saute till they turn light brown in colour.
Now add the red chillies, hing and curry leaves and saute for few seconds.
Add the chopped french beans and mix well. Stir-fry for a minute on low flame. Then add 3/4 cup of water along with salt.
Cover the pan with a lid and cook the beans till they become tender. Add little water, if required, during cooking, if the water dries up.
Once the beans are fully cooked, add the grated coconut and mix well. Switch off the flame.
Serve beans stir-fry or french beans poriyal with steamed rice and sambar or as a side dish for rotis.
