French beans subzi – Maharashtrian style recipe – How to make Farasbi chi sabzi – side dish for rotis
French beans subzi is a simple recipe made with French beans in Maharashtrian style with peanuts and goda masala as the main ingredients. Peanuts give a nutty taste and goda masala gives a unique flavor to this dish.
French beans are low in calories and fat and contains no cholesterol. The fiber content is very high and also provides daily protein requirements. They are also high in vitamin A, C, K and folic acied and a good source of calcium, iron, manganese potassium and copper.
This vegetable dish is not only tasty but healthy too with minimum oil used in its preparation. French beans stir-fry goes well as a side dish with steamed rice and rotis. It is also a no-onion no-garlic and a vegan recipe.

INGREDIENTS
French beans – 250 gms
Peanuts – 2 tablespoons
Oil – 2 tablespoons
Mustard seeds/rai – 1/2 teaspoon
A pinch of asafetida or hing
Few curry leaves
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1 teaspoon
Goda masala powder – 1 teaspoon
Powdered jaggery – 1 teaspoon
Salt to taste
Lemon juice – 2 teaspoons
HOW TO MAKE OR PREPARE FRENCH BEANS SUBZI MAHARASHTRIAN STYLE
PREPARATION
Wash/rinse the french beans in running water in a colander and drain them. Cut the side strings of the beans and discard them. Chop the beans into small pieces and set aside.
METHOD
Heat a pan on medium flame. Add peanuts and roast till light brown in colour. Remove the skin.
Grind the peanuts to a fine powder. Keep it aside. Heat the pan on medium flame. Add mustard seeds, hing and curry leaves. Saute till the mustard seeds splutter.
Add the chopped beans and saute well. Add salt, red chilli powder, turmeric powder and goda masala powder.
Mix everything well. Sprinkle few tablespoons of water. Cover the pan with its lid and cook on a low flame till the beans are well cooked.
Once the beans are well cooked, add peanut powder and jaggery. Mix well. Cook for another 2 minutes on a low flame.
Lastly add lemon juice and mix well. Switch off the flame. Farasbhi chi subzi is ready to be served. Serve as a side dish with rotis or rice.
NOTES/TIPS
You can use garam masala if you do not have goda masala powder.
Add peanut powder jaggery powder only after the beans are fully cooked.
