Mango kesari or mango sheera recipe
Mango sheera or kesari is a very popular dessert in Maharashtra. It is an Indian sweet dish made with fresh mangoes, semolina, sugar and garnished with raisins and nuts. The making of mango sheera is very similar to the regular semolina sheera. The only difference is that mango pulp is added to it which gives a nice flavour and colour to the sheera. You can add mango pieces or mango pulp or a combination of mango pieces and mango pulp according to the taste desired. Anyways the end result is very delicious and tasty.
Ingredients
- Fresh alphonso mangoes - 2
- Semolina or rava- 1 cup
- Milk - 1 cup
- Water - 1/2 cup
- Sugar - 1/2 cup
- Ghee - 1/4 cup
- Cardamom powder - 1/2 teaspoon
- Cashew nuts - 5
- Raisins - 5
Method
Step 1
HOW TO MAKE MANGO KESARI OR MANGO SHEERA RECIPE Heat 2 tablespoons of ghee in a pan. Add semolina and roast them on a low flame till the aroma exudes. Keep aside.
Step 2
In the same pan, add 1 tablespoon of ghee and stir fry the cashew nuts and raisins till light brown and set aside.
Step 3
Take out the pulp from the mangoes and blend in a mixer or blender to a smooth paste.
Step 4
Heat a pan. Add water, mango pulp and milk. Mix well and cook on a low flame.
Step 5
Once it starts boiling, add roasted semolina little by little and keep stirring continuously.
Step 6
Ensure no lumps are formed. It will take 10 to 15 minutes for semolina to get fully cooked.
Step 7
Once cooked and no water is left, add sugar, cardamom powder and remaining ghee and stir well.
Step 8
Cook for another 5 to 7 minutes and switch off the flame.
Step 9
Garnish mango kesari with fried cashewnuts and raisins.
Step 10
Note : No Food colour required to be added, since the mango itself has a natural orange colour
