Tutti frutti cookies – delicious and colourful cookies made with all purpose flour and tutti fruttis. Tutti frutti cookies or biscuits serve as a good teatime snack and addition of tutti frutti makes it all the more tasty and a tempting snack. These cookies can be made and stored in an airtight container for about a month. Tutti frutti cookies also makes up for a nice gift to family or friends.

INGREDIENTS
All purpose flour or maida – 1 cup
Powdered sugar – 3/4 cup
Butter – 1/2 cup
Custard powder – 1/2 cup
Tutti frutti – 1/2 cup
Powdered cashewnuts- 1/4 cup
Milk – 5 tablespoons
Rose essense or vanilla extract – 1 teaspoon
Baking powder – 1/2 teaspoon
HOW TO MAKE OR PREPARE EGGLESS TUTTI FRUTTI COOKIES RECIPE
Sieve the maida, custard powder and baking powder in a bowl. Stir all the ingredients well so that they are well combined.
Add tutti frutti and powdered cashewnut and mix well again. Keep it aside
In a separate bowl, add powdered sugar, vanilla essence and butter. Whisk the mixture with the help of a blender or a whisker till they become light and fluffy.
Add 5 tablespoons of milk and combine together.
Now add the sieved dry ingredients (all purpose flour, custard powder and baking powder mixture) to the wet mixture. Gently mix with your hands and knead them into a smooth and firm dough. Milk helps to bind the mixture. Add milk as required to bind the mixture to a dough.
Divide the dough into 2 equal parts, so that it becomes easier to slice it later. Roll the doughs into a log shape. Gently press on both the sides of the dough with your hand.
Keep this dough in a butter paper and roll it fully covering the dough. Place this log into the freezer for 30 minutes.
After 30 minutes, remove the butter paper and slice the dough into round cookies, with the help of a sharp knife.
Preheat the oven at 180 degree celcius. Bake the cookies for 15 to 20 minutes or until baked. If the cookies turn slightly brown from the edges, it means it is done. Once done, allow the cookies to cool down. Store them in an airtight container.
Serve colourful and tasty tutti frutti cookies with tea or coffee.
NOTES/TIPS
You can add more or less tutti frutti according to the sweetness and taste required by you.
If the cookies are not baked properly, bake for some more time, as different ovens have different capacity and temperature. So bake them accordingly.
You can also add dried fruits like chopped dates, walnuts, raisins for more delicious flavour.
Chilling the dough helps to make cookies stay round, while baking. Otherwise, it tends to spread unevenly during baking.
You can use plain custard powder. I used raspberry flavoured custard powder. Hence the cookies are little pinkish in colour.
You can use icing sugar instead of powdered sugar.
Add cardamom powder for more added flavour.
