Spring onion soup – a very easy and delicious soup recipe made with spring onions. It is a flavourful soup and has the freshness of the spring onions. Spring onions are available in plenty during winter season. This soup brings out the goodness of the spring onions which is nutritious and boost our good health. It is light on the stomach too. Potato is added to give a thick consistency to the soup. But if you want a thin soup, you can skip potato or add little more water to bring to your desired consistency. INGREDIENTS
Spring onions (white and greens) – 2 cups
Potato -1 (medium sized and chopped in medium pieces)
Garlic cloves – 4 (chopped roughly)
Olive oil – 2 tablespoons
Black pepper powder – 1/2 teapoon
Water – 2 cups
Salt to taste
HOW TO MAKE OR PREPARE SPRING ONIONS SOUP RECIPE
Heat olive oil in a pan on medium flame. Add garlic cloves and stir-fry for a minute till it turns light brown in colour. Then add chopped spring onions and greens.
Saute for 4 to 5 minutes on a low flame. Add chopped potatoes and salt. Stir well.
Cook for a minute. Then add 2 cups of water.
Cover the pan and cook till the potatoes are well cooked. Once cooked, switch off the flame. Let it cool down a bit. Take a grinder or blender and add the mixture after draining the excess water.
Keep this vegetable stock/water aside. Make a smooth puree of the mixture.
Heat a pan on medium flame. Add the pureed mixture and the vegetable stock. Simmer the soup for 4-5 minutes on a medium flame. If the soup is too thick add little water or vegetable stock and bring it to the right consistency. Check for salt and add if required. Switch off the flame. Finally add black pepper powder and give a good mix.
Hot spring onions soup is ready to served. Serve it plain or garnished with some spring onion greens.
NOTES/TIPS
You can add lemon juice to the soup, just before serving for a tangy taste.
You can also add parboiled potato, if you want to make the soup quickly.
