Rajma/kidney beans sundal is a south indian dish made with kidney beans/rajma, mild spices, green chillies, curry leaves and garnished with grated coconut. It is a easy to make and delicious snack which is offered as prasadam/neivadyam during Navrathri festival. Rajma sundal is not only quick to prepare but also very healthy too. Other varieties of sundal which are prepared during Navratri festival are chana dal sundal, green gram sundal and black chickpeas sundal. These sundals also make up for a quick healthy and guilt free snack.

INGREDIENTS
Kidney beans / rajma – 1/2 cup
Oil – 2 tablespoons
Mustard seeds/rai – 1/2 teaspoon
Urad dal – 1/2 teaspoon
Red chillies – 2
Green chilly- 1
A pinch of asafoetida/hing
Turmeric powder – a pinch
Curry leaves – 10
Freshly grated coconut – 2 tablespoons
Salt to taste
HOW TO MAKE OR PREPARE RAJMA/KIDNEY BEANS SUNDAL RECIPE
Wash and soak rajma with sufficient water for 7-8 hours or overnight. Drain and pressure cook the rajma with 3-4 cups of water and salt upto 5 whistles or till completely cooked. Drain the water and keep it aside.
Heat oil in a pan. Add mustard seeds and urad dal and saute till golden brown. Add red chillies, green chillies, hing and curry leaves. Stir fry for few seconds.
Add the cooked rajma beans and mix well. Add salt if required. Saute for 3-4 minutes on a low flame to medium flame.
Switch off the flame. Add grated coconut and mix well.
Delicious rajma sundal is ready to be served. Serve as a prasad or neivadyam. It can also be had as a light evening snack.
