Shavige Uppittu or Vermicelli Upma
SHAVIGE UPPITTU OR VERMICELLI UPMA
Vermicelli upma is a very simple and delicious breakfast dish made with vermicelli, onions and tomatoes. You can add your own choice of vegetables like carrot or peas to make it even more nutritious. It is high on fibre and low on calories.

Cooking time : 20 minutes
Ingredients
Vermicelli – 3 cups
Onions – 2 nos (chopped finely)
Tomatoes – 2 nos (chopped finely)
Green chillies – 2 to 3 nos (chopped finely)
Mustard seeds – 1 tsp
Chana dal – 1 tsp
Urad dal – 1 tsp
Cashew nuts – 7 to 8
Salt to taste
Sugar – 1 tsp
Oil – 2 tblspn
Curry leaves – 1 string
For garnishing
Few coriander leaves
Grated coconut – 2 tblspn
Lemon – 1
Ghee – 1 tblspn
How to make Shavige uppittu or vermicelli upma
Heat 1 tsp of oil in a kadai. Fry vermicelli till golden brown and set aside.
Heat the remaining oil in the same kadai. Add mustard seeds. Once it starts spluttering, add urad dal, chana dal, cashewnuts and stir fry till they turn light brown.
Add green chillies, curry leaves, onions and fry till the onions become translucent.
Add tomatoes and cook on a slow fire till they become little soft.
Add 6 cups of water and salt and cover with a lid.
When the water starts boiling, reduce the flame and add vermicelli little by little stirring in between so that no lumps are formed. Add more water if required.
Cover with a lid and cook the vermicelli for 5 to 6 minutes on a low flame.
Once cooked, add coriander leaves, sugar, ghee and lemon juice and mix well Serve vermicelli upma hot with coconut chutney or tomato sauce.
