Vegetable oats upma recipe – healthy breakfast recipes
Vegetable oats upma is a very healthy and delicious breakfast dish which be prepared quickly. It is made with quick cooking oats and vegetables like carrot, peas, onions and beans. Vegetable oats upma is a very sumptuous and nutritious dish. A very healthy breakfast option to start your day.
Ingredients
- Oats (Quick cooking oats) - 2 cups
- Onions - 1/4 cup (chopped finely)
- Carrot - 1/4 cup (chopped finely)
- Green peas - 1/4 cup (chopped finely)
- French beans - 1/4 cup (chopped finely)
- Water - 1 1/2 to 2 cups
- Chopped coriander leaves - 2 tablespoons
- Lemon juice - 1 tablespoon
- Green chillies - 2 nos (chopped finely)
- Salt to taste
- FOR TEMPERING
- Cooking oil - 2 tablespoons
- Mustard seeds - 1/2 teaspoon
- Urad dal - 1/2 teaspoon
- Bengal gram/chana dal - 1/2 teaspoon
- Few curry leaves
Method
Step 1
HOW TO MAKE VEGETABLE OATS UPMA RECIPE Heat a non stick pan or a heavy bottomed pan. Dry roast the oats on a medium flame till aroma exudes and oats become little crisp. (Roasting the oats helps the oats from not getting too mushy while cooking)
Step 2
Chop all the vegetables to be added and keep it ready.
Step 3
Heat 2 tablespoons of oil in the same pan. Add mustards seeds and stir fry. Once the seeds start spluttering, add urad dal and chana dal.
Step 4
Cook till the dals turn light brown in colour. Then add onions, curry leaves and green chillies and cook on a low flame till the onions become translucent.
Step 5
Add peas, beans, carrots and mix well. Cook for another 2 minutes on a medium flame.
Step 6
Add water and salt and bring it to good boil. Cook till all the vegetables are fully cooked.
Step 7
Add oats and cook for 4-5 minutes on a medium flame.
Step 8
Cook till all the water is absorbed and oats gets cooked. Garnish with coriander leaves and sprinkle lemon juice. Mix well.
Step 9
Vegetable oats upma is ready to be served. It can be served with curd or any chutney of your choice. But it tastes good on its own and does not require any side dish.
