Karela fry (Bittergourd fry)
A healthy stir fry vegetable cooked with spices.
Ingredients
- Bittergourd - 4
- Mustard seeds - 1 teaspoon
- Cumin seeds - 1/2 teaspoon
- Turmeric powder - 1/4 teaspoon
- Red chilli powder - 1 teaspoon
- Salt to taste
- Sugar -1 teaspoon (optional)
- Oil - 3 tablespoons
Method
Step 1
Deseed and chop the bittergourd into small pieces.
Step 2
Apply salt to the bittergourd pieces and set aside for half an hour.
Step 3
Squeeze the water out of the bittergourd pieces.
Step 4
Heat oil in a pan. Add mustard seeds. Allow it to crackle. Add cumin seeds and fry for 30 seconds.
Step 5
Add bittergourd pieces and stir fry on a medium flame for 10 to 15 minutes.
Step 6
Add salt, turmeric powder and red chilli powder. Mix well and stir fry till the bittergourd pieces are crispy brown.
Step 7
Add 1 teaspoon of sugar and combine together. Serve hot with rice or rotis.
