Mixed vegetable pulao or mixed vegetable rice recipe
Mixed vegetable pulao is a an easy, delicious and healthy one pot meal prepared with mixed vegetables, rice and spices. It is a comforting food and simple and quick to make and goes well with any gravy like paneer butter masala or mutter paneer or chana masala or even plain onion raita or cucumber raita. Mixed vegetable pulao makes up for a perfect lunch box recipe for working people and even bachelors who can cook this simple and healthy meal in a jiffy.

Easy lunch recipe
INGREDIENTS
Basmati rice – 1 cup
Mixed vegetables – 1 1/2 to 2 cups (green peas, corn, carrot and french beans)
Onion – 1 (chopped finely)
Tomato – 1 (chopped finely)
Turmeric powder – 1/4 teaspoon
Garam masala powder – 1/2 teaspoon
Salt as required
TO GRIND
Ginger – 1 inch small piece
Garlic cloves – 4-5
Green chillies – 2-3
Grated coconut – 1/4 cup
FOR SEASONING
Oil/Ghee – 2 tablespoons
Bay leaves/Tej patta – 2
Cloves – 2
Cinnamon – 1 inch piece
HOW TO MAKE MIXED VEGETABLE PULAO OR RICE RECIPE
Soak basmati rice for half an hour. Drain the water and keep the rice aside. Grind ginger, garlic cloves, green chillies and grated coconut with little water to a smooth paste.
Take a small pressure cooker and heat on a low flame. Add oil or ghee. Once the oil becomes little hot, add bay leaves, cloves, cinnamon and saute for few seconds.
Add chopped onion and saute on medium flame till it becomes translucent. Add chopped tomatoes and cook till they become little soft.
Add the ground ginger-garlic-green chillies-grated coconut paste and stir fry for a minute. Add the mixed vegetables and saute on medium flame for 2 minutes. Add the drained rice, turmeric powder, salt and garam masala and mix well. Add 2 cups of water and close the pressure cooker. Pressure cook on a medium flame for 3 whistles.
Once cooled down, open and add ghee and fluff the pulao lightly.
Mixed vegetable pulao is now ready to be served. Serve hot with plain onion raita or papad or any gravy of your choice.
NOTES/TIPS
- Soaking the rice helps to cook faster and helps to make soft pulao.
- You can garnish with chopped coriander leaves and little lemon juice to further enhance the taste.
