Sprouted green moong khichdi is a delicious and healthy one pot meal with the goodness of protein in it. It is made with sprouted green moong and rice and cooked in mild spices. Green moong is full of nutritional benefits. This khichdi is very simple and easy to make as it can be easily done in a pressure cooker. Sprouted green moong gives a good taste and flavour to the khichdi. It can be had as a lunch time meal or as a breakfast dish. Green moong khichdi is best served with curd, raita, papads, pickles or as it is plain.

INGREDIENTS
Sprouted green gram/moong – 1 cup
Rice – 1 cup
Ghee or oil – 2 tablespoons
Mustard seeds or rai – 1/2 teaspoon
Cumin seeds or jeera – 1/2 teaspoon
Ginger-garlic paste – 1 teaspoon
Green chillies – 4 (slit vertically into 2)
Onion – 1 (chopped finely)
Tomatoes – 2 (chopped finely)
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1/4 teaspoon
Coriander powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Water – 4 cups
Salt to taste
HOW TO MAKE OR PREPARE SPROUTED GREEN MOONG KHICHDI RECIPE
Soak the rice in sufficient water for half an hour. Then drain the water and keep the rice aside.
Heat oil or ghee in a small pressure cooker. Add mustards seeds and cumin seeds and allow them to crackle.
Add onions, ginger-garlic paste and green chillies and stir-fry for a while till the onions become translucent. Add chopped tomatoes and cook on a low flame till the tomatoes become little soft.
Then add sprouted green moong and the rice. Add 4 cups of water and mix well. Add turmeric powder, red chilli powder, coriander powder and garam masala. Mix well again.
Lastly add ghee and salt. Mix well. Close the cooker with its lid and pressure cook for upto 4 whistles.
Once the pressure has gone, open the lid and give a quick stir. Delicious and healthy sprouted green moung khichdi is ready to be served. Serve the khichdi hot with papads, pickles, raita or with plain curd.
NOTES/TIPS
You can also cook the khichdi in an open pan. In that case, bring the water to a nice boil and simmer for 15-20 minutes till the rice is well cooked.
Khichdi tends to become thick once cooled down. So add water accordingly when preparing khichdi.
You can add your own choice of vegetables like french beans, green peas, carrots to make it even more healthier.
