Carrot stir-fry – carrot palya – carrot poriyal – carrot subzi recipe
Carrots are cruncy powerfood rich in Vitamin A and has got lot of health benefits like beautiful skin, cancer prevention, improved vision and anti-aging. To get the maximum benefits, it can be eaten raw, just boiled or steamed. Carrot subzi or carrot palya is a simple and healthy south indian recipe and serves as an excellent side-dish for steamed rice or sambar rice or any rice varieties. Finely chopped carrots are stir fried with spices and garnished with freshly grated coconut and chopped coriander leaves. Carrot stir fry is called as carrot palya in Karnataka. It is one of the simplest stir-fry recipe. I have added onions to give a better and different taste to the subzi, but you can always skip onions, if you do not prefer it. It tastes divine even without onions.
Prep Time : 15 mins Cook Time : 20 mins Servings : 4 persons Total time – 35 mins INGREDIENTS Carrot – 5oo gms Onion – 1 chopped finely (optional) Turmeric powder – 1/4 teaspoon Salt to taste FOR SEASONING Cooking oil – 2 tablespoons Mustard seeds (rai) – 1/2 teaspoon Split urad dal – 1/2 teaspoon Chana (bengal gram) dal – 1/2 teaspoon Whole red chillies – 3-4 FOR GARNISHING Freshly grated coconut – 1/4 cup Chopped coriander leaves – 2 tablespoons
HOW TO MAKE OR PREPARED CARROT STIR-FRY OR CARROT PALYA OR CARROT PORIYAL RECIPE
Wash the carrots thoroughly in water. Pat dry with a clean cloth. Peel the skin of the carrots and then chop them finely. Keep it aside.
Heat oil in a pan. When the oil becomes hot, add mustard seeds. Once the seeds starts spluttering, add urad dal and chana dal and fry till light brown colour.
Add chopped onions and saute till the onions become translucent. Now add chopped carrots, turmeric powder and half a cup of water. Cover the pan with a lid and cook on a low to medium flame till the carrots become soft and water gets absorbed fully. Sprinkle more water if required and cook till the carrots are cooked. Once the water is fully evaporated, add salt and mix well.
Add grated coconut and chopped coriander leaves and mix well. Switch off the flame.
Serve carrot stir fry or carrot subzi with steamed rice or sambar rice or any rice dishes.
