Tofu bhurji is a delicious scrambled tofu mixed with spices, which goes well as a side dish for rotis, chapathis, bread, pav or variety rice. Tofu bhurji is very similar to paneer bhurji, but here, paneer is replaced with tofu. It is a vegan recipe for paneer or egg bhurji. Tofu is also known as bean curd, which is a food made from soyabeans. It has a low calorie count, low in fat and relatively got large amounts of protein. It is high in iron, calcium and other micro nutrients and an excellent food from a nutritional and health perspective. Tofu is also known to protect from heart diseases and a good dish for vegans who have lactose intolerance. Tofu bhurji is very tasty and more flavourful dish, when cooked with spices.

INGREDIENTS
Regular tofu – 200 gms
Onion – 1 (medium sized) (chopped finely)
Tomatoes – 2 (medium sized) (chopped finely)
Mustard seeds – 1/2 teaspoon
Cumin seeds – 1/2 teaspoon
Green chillies – 2 (chopped finely)
Ginger – half inch sized chopped finely or grated
Cumin powder – 1/4 teaspoon
Turmeric powder – a pinch
Red chilli powder – 1/4 teaspoon (optional)
Garam masala – 1/2 teaspoon
Chopped coriander leaves for garnishing
Few curry leaves
Cooking oil – 2 tablespoons
Salt as per taste
HOW TO MAKE OR PREPARE SCRAMBLED TOFU BHURJI RECIPE
Scramble tofu with hand and keep it aside
Heat oil in a pan on medium flame. Add mustard seeds and cumin seeds and allow it to splutter. Add chopped onions, green chillies and ginger and cook till the onions become translucent.
Add chopped tomatoes and curry leaves and cook on low to medium flame till the tomatoes become soft and cooked. Add red chilli powder, turmeric powder, cumin powder, salt and garam masala and mix well.
Cook for another 2 minutes on low flame. Add tofu and mix well. Cook for another 3-4 minutes on medium flame till there is no moisture left and the bhurji becomes dry.
Add chopped coriander leaves and mix well. Switch off the flame. Tofu bhurji is ready to be served. Transfer the bhurji to a serving bowl.
Serve tofu bhurji hot or warm with rotis, bread, chapathis, pavs or variety rice.
NOTES/TIPS
You can also add capsicum, which gives a wonderful flavour to this dish.
You can replace tofu with paneer or egg to make paneer bhurji and egg bhurji with the same recipe.
You can also add pepper powder instead of red chilli powder to give a distinct flavour and taste to the bhurji.
