Carrot and peas stir-fry (gajar matar subzi) recipe – no onion no garlic recipe
Carrot peas stir-fry is a simple, quick and healthy stir-fry vegetable made with carrots, peas and mild spices. Carrots are excellent source of vitamin A which is good for eyes and green peas are full of vitamins. Try this amazing dry curry with healthy carrots and green peas. It is very simple but so flavourful dish. This is a no onion no garlic recipe. It is made with minimum ingredients and goes well with rotis as well as dal rice, khichdi rice, plain rice or rotis.

INGREDIENTS
Carrots or gajar – 5 nos
Green peas or matar – 1 cup
Cooking oil – 2 tablespoons
Mustard seeds or rai – 1/2 teaspoon
Cumin seeds or jeera – 1/2 teaspoon
Ginger – 1 inch sized chopped finely or grated
Red chilli powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Few coriander leaves for garnishing
Salt to taste
HOW TO MAKE OR PREPARE CARROT PEAS STIR-FRY OR GAJAR MATAR SUBZI RECIPE
Wash the carrots in running water. Peel the skin and chop them into small or medium pieces. Keep aside.
Heat oil in a pan on a medium flame. Add mustard seeds and allow them to splutter. Once the seeds stop spluttering, add cumin seeds and saute them.
Add the chopped ginger and fry till the raw smell of the ginger goes away. Now add the chopped carrots, green peas and salt and mix well. Saute for 3-4 minutes.
Add 3/4 cup of water and stir well. Cook on a medium flame till the vegetables are well cooked. Keep stirring occasionally. Add little more water if required, if the veggies are not yet cooked or they get browned.
Once they are cooked well, add garam masala and mix well. Switch off the flame.
Garnish the carrot peas stir-fry with chopped coriander leaves.
Serve the subzi hot with rotis or rice.
