Carrot moong dal salad or hesaru bele kosambari (as called in Karnataka) is the  healthiest salad made from carrot and moong dal and a traditional salad of Karnataka State.  This salad is commonly served as a side dish during a wedding feast.  Lemon juice added to this salad gives a tangy taste.   Carrot moong dal is not only a delicious salad but also a protein rich dish.  It does not involve cooking and  very easy to prepare too.

INGREDIENTS

Grated carrot – 1 cup

Moong dal – 3 tablespoons

Green chillies  – 2 (chopped finely)

Grated coconut – 1/4 cup

Chopped coriander leaves – 2 tablespoons

Half lemon

Salt to taste

FOR TEMPERING/SEASONING

Cooking oil – 1 teaspoon

Mustard seeds (rai) – 1/4 teaspoon

A pinch of asafoetida (hing)

Whole red chillies – 2

HOW TO MAKE OR PREPARE CARROT KOSAMBARI RECIPE

Soak the moong dal for an hour.  Then drain the excess water with the help of a strainer.  Take a mixing bowl.  Add the grated carrot, moong dal, grated coconut, green chillies, chopped coriander leaves, lemon juice and salt.

Mix well together.  Heat 1 teaspoon of oil.  Add mustard seeds, hing and red chillies and fry for few seconds.

Add this seasoning to the salad and mix it well.  Tasty and healthy carrot salad is ready to be served.   Serve as a side dish for steamed rice or just plain as it is.

NOTES/TIPS

Add raw mango pieces (when seasonally available) to kosambari to give a nice flavour and tangy twist.

Adjust lemon juice as per your taste.

Add lemon juice just before serving, otherwise the salad will get watery.
