Mango shrikhand or amrakhand recipe
Mango shrikand or amrakhand is a very popular dessert in Maharashtra and Gujarat and is best served with puris or as a dessert. Amrakhand is made especially during summers and is very simple to make too. Here the mango pulp is well blended with sweetened shrikand (hung yoghurt) and flavoured with nuts.
Ingredients
- Yoghurt/curd - 3 cups
- Sugar - 1/2 cup
- Mango puree - 1 cup
- Saffron strands - 5-6
- Cardamom powder - 1/4 teaspoon
Method
Step 1
HOW TO MAKE MANGO SHRIKHAND OR AMRAKHAND RECIPE Place the yoghurt in a thin muslin cloth and tie it tightly around the neck of the cloth. Hang it overnight or for 6-7 hours to remove or drain all the water from the yoghurt. Place a vessel below the cloth to collect the water.
Step 2
Next day, remove the hung yoghurt in a bowl. Take a blender and put the hung curd. Add mango puree, sugar, cardamom powder and saffron strings to it and blend it till it becomes a smooth puree.
Step 3
Pour amrakhand in a serving bowl. Keep it in the fridge for an hour and serve chilled with puris or plain.
Step 4
NOTES: You can nuts of your choice to garnish and further enhance the taste. The yoghurt should not be sour. I have used alphonso mangoes but you can use any other variety of mangoes too but if it is sweet and fresh, it tastes better. If the mangoes are very sweet, you can adjust the sugar accordingly.
