Small potato fry or baby potato fry recipe – side dish for rotis
Baby potato fry is an ideal and perfect side dish for rotis and rice. It is a simple, delicious and most loved vegetable of almost all cuisines of the world. Potatoes are rich in carbohydrates and dietary fibre too. Do try this easy and quick stir fry recipe and enjoy with rotis, rice or any Indian bread.

INGREDIENTS
Small or baby potatoes – 30-35
Oil – 2 tablespoons
Mustard seeds – 1/2 teaspoon
Curry leaves – a string
Cumin seeds (jeera) – 1/2 teaspoon
Turmeric powder – 1/4 teaspoon
Red chilli powder – 1 teaspoon
Coriander powder – 1 teaspoon
Cumin powder – 1 teaspoon
Garam masala – 1/2 teaspoon
Coriander leaves for garnishing
Salt to taste
HOW TO MAKE OR PREPARE BABY POTATO FRY OR SMALL POTATO STIR FRY RECIPE
Pressure cook the small potatoes with enough water for upto 3 whistles. When the potatoes become warm, peel the skin and set aside.
Heat oil in a kadai. Add mustard seeds and allow them to splutter. Then add cumin seeds and saute till they change colour.
Reduce the flame to low heat and add all the spice powders – turmeric powder, red chilli powder, coriander powder, cumin powder and garam masala and mix well, Add salt and curry leaves and mix well. Give a quick stir and take care not to burn the spice powders.
Then add the peeled potatoes and give a good mix so that the potatoes are evenly coated with the masala. Cook the potatoes on a low flame for 4-5 minutes. Lastly add chopped coriander leaves and stir well. Switch off the flame.
Serve small potato fry as an accompaniment for rotis or sambar rice, rasam rice or curd rice.
NOTES/TIPS
Pressure cook or boil the baby potatoes till just cooked and not too mushy.
