Apple kheer is a very delicious kheer made with milk and with the goodness of apples. It is an ideal kheer for any festive or special occasions. If you do not like apples, this is a nice way to include apples in your diet. Apple kheer can also be had during fasting days as it is very filling and nutritious too. You can serve apple kheer as an after-meal dessert or as a healthy sweet dish to the kids. The sweet taste of apples and cardamom gives a nice flavour and fragrance to the kheer.

INGREDIENTS
Full fat milk – 1 litre
Apples – 2 (medium sized) (peeled and grated)
Sugar – 1/2 cup
Cardamom powder – 1/4 teaspoon
Saffron strings – a few strands
Cashewnuts – 10
Raisins – 15
Ghee – 3 tablespoons
HOW TO MAKE OR PREPARE APPLE KHEER OR PAYASAM RECIPE
Boil the milk in a pan on medium flame. When it comes to a nice boil, lower the flame and cook till it reaches 3/4th of its original quantity. Keep stirring in between to prevent sticking. It will take around 18-20 minutes. Once done, switch off the flame.
Heat 2 tablespoons of ghee in another pan on medium flame. Add the grated apples and cook them on a low to medium flame. The apples will start releasing water. Saute the mixture till it becomes little dry and water is fully absorbed.
Heat 1 tablespoon of ghee in a small tadka pan. Add the cashewnuts and raisins and saute till light golden colour. Set them aside. Once the apple mixture becomes dry, add the sugar and mix well.
The mixture will become watery. Keep cooking on a medium flame for 3-4 minutes till the sugar is fully dissolved. Switch off the flame. Let the mixture cool down completely.
Add the cooled and cooked apple mixture to the milk and boil the kheer on a low flame for 5-7 minutes. Add saffron strings and cardamom powder. Mix well.
Cook for another 2 minutes. Add fried cashewnuts and raisins and mix well. Switch off the flame.
Delicious apple kheer is ready to be served. Serve hot, warm or chilled and enjoy as a after meal dessert or as a filling fasting dish.
NOTES/TIPS
Choose apples which are sweeter in taste for making this kheer.
Grate the apples just before making the kheer to avoid the apples changing its colour, due to oxidation.
Adjust the sugar as per the sweet taste required by you.
You can also add 2 tablespoons of condensed milk to enhance the taste and make the kheer more creamier.
Ensure that the cooked apple mixture is cooled down completely before adding to the milk, or else the milk will start to curdle.
Apple kheer is best served chilled. The kheer will become little thick when refrigerated.
