Candy sugar or rock candy kheer or aval kalkandu payasam recipe – kheer recipes

Candy sugar or rock candy (rock sugar) kheer is a tasty kheer recipe made with flattened rice and rock candy and garnished with nuts.  Rock candy is also called as kalkhand and are relatively large sugar crystals.  It is also regarded as having medicinal properties.  In this recipe, I have used flattened rice or poha to make the kheer.  But you can also use normal rice for making this kheer or even make oats kalkandu kheer with the same recipe.  Aval kalkandu kheer can be prepared quickly as it takes less than half an hour to make it.  Rock candy gives good sugary taste to the kheer.  You can use thin rice flakes instead of thick rice flakes, as the thick ones takes little more time to cook.

INGREDIENTS

Milk – 2 cups

Thin rice flakes or aval or flattened rice – 1/2 cup

Candy sugar or rock candy – 1/2 cup

Ghee – 2 tablespoons

10 to 12 saffron strings

Few cashewnuts  and raisins

Cardamom powder – 1/4 teaspoon

HOW TO MAKE OR PREPARE CANDY SUGAR OR ROCK CANDY KHEER/PAYASAM RECIPE

Heat ghee in a pan on medium flame.  Add cashewnuts and roast till golden brown in colour.  Then add raisins and stir fry till they puff up.  Keep the fried nuts and raisins aside.  In the same pan, add the rice flakes and roast for a minute or two till they become little crisp.

Now add milk and saffron strings and cook on medium flame till the rice flakes gets completely cooked.

Once the rice flakes are cooked, add the rock candy and mix well.  Cook everything on medium flame till the kheer gets little thickened and sugar is completely dissolved.

Add cardamom powder and fried cashewnuts and raisins.  Give a quick stir and cook for another one minute.  Switch off the flame. Transfer the kheer to a serving bowl.   Aval kalkandu kheer is ready to be served.

Serve aval kalkandu payasam or rock candy kheer warm or chilled.

NOTES/TIPS

You may also use normal sugar or jaggery for making this kheer.

Rock candies can be grounded before adding to the kheer, but you can add them directly too.

Adjust the sugar as per the taste desired by you.

Store the kheer in the refrigerator and serve chilled.
