Chapathi upma is a very tasty snack made with chapatis and cooked with onions and spices. It is a very easy and quick recipe which gets ready in no time. Chapathi upma can be made with minimal ingredients available at home. If you have leftover chapatis or excess rotis, you can make this at your home and enjoy. Chapathi upma is also called as phodnichi poli and is a common breakfast dish in Maharashtra. You can add vegetables of your choice and make it more healthier too. INGREDIENTS
Chapathis/rotis – 5 to 6
Oil – 2 tablespoons
Mustard seeds or rai – 1/4 teaspoon
Cumin seeds or jeera – 1/4 teaspoon
Onion – 1 (chopped finely)
Green chillies – 3 (chopped finely)
Turmeric powder – 1/4 teaspoon
Peanuts – 2 tablespoons
Tomatoes – 2 (chopped finely)
Lemon juice – 2 teaspoons
Sugar – 1 teaspoon (optional)
Few curry leaves
Chopped coriander leaves for garnishing
Salt to taste
HOW TO MAKE OR PREPARE CHAPATHI OR ROTI UPMA OR PHODNICHI POLI RECIPE
Make small pieces of chapathis and grind the chapathis coarsely in a grinder. Do not overgrind. Remove them in a plate.
Heat oil in a pan on medium flame. Add mustard seeds. Once the seeds stops spluttering, add jeera and peanuts. Stir fry till they turn light brown in colour. Then add chopped onions and curry leaves and saute till the onions become translucent.
Add chopped tomatoes, salt and turmeric powder and mix well. Cook on a medium flame till the tomatoes become little soft. Then add the coarsely ground chapathis.
Mix well. Cook for another 2-3 minutes on a low flame. Then add chopped coriander leaves, sugar and lemon juice and combine together. Switch off the flame. Chapathi upma is ready to be served.
Chapathi or roti upma is best served hot.
NOTES/TIPS
You can add finely chopped carrots, capsicum or green peas to a give a healthy twist.
Add garam masala to give a spicy flavour to the dish.
Peanuts gives a good taste to the dish. Do not skip peanuts.
