Mixed sprouts fried rice is a quick and tasty one pot meal made with mixed sprouts and rice and seasoned with vinegar, soya sauce, tomato sauce and green chilli paste.  It is a filling and healthy rice dish  which does not need any side dish and can be had just as it is.  You can add your own choice of vegetables like cabbage, capsicum or spring onions and make it even more nutritious.

Basmati rice – 2 cups (cooked)

Mixed sprouts – 1 cup

Cooking oil – 2 tablespoons

Garlic cloves – 4 (chopped finely)

Ginger – 1 teaspoon (grated or chopped finely)

Green chillies – 2 (chopped finely)

Onion – 1 (chopped finely)

Vinegar – 1 teaspoon

Soya sauce – 1/2 teaspoon

Tomato sauce – 1 tablespoon

Pepper powder – 1 teaspoon

Green chilli paste – 1/2 teaspoon (optional)

Salt as per taste


Heat oil in a pan on medium flame.  Add chopped garlic and ginger and saute till the raw smell goes away.  Add chopped green chillies and onions and saute till the onions become translucent.

Add the mixed sprouts  and give a good mix.  Add salt and pepper powder and mix well again.

Cover the pan with its lid and cook on a low flame for upto 5 minutes, till the sprouts become little soft.  Then add vinegar, soya sauce, tomato sauce and green chilli paste.

Mix well. Add the cooked rice and mix well.

Cook for another 2 minutes on a low flame.  Switch off the flame.  Mixed sprouts fried rice is ready to be served.

Serve sprouts fried rice hot with any side dish of your choice or as it is plain.



Do not overcook the sprouts, as the sprouts should be crunchy in taste.

Add your own choice of vegetables like cabbage, capsicum or spring onions for a more healthy dish.

You can use only sprouted green gram if you do not have mixed sprouts.

Ensure that the cooked basmati rice is fluffy and not mushy.  1 cup of raw basmati rice will give you 2 cups of cooked basmati rice. Cook for 1 : 1.5 ratio (rice : water) in pressure cooker for 3 whistles or microwave on 100 percent high for 10 minutes.
