Mango sheera or kesari is a very popular dessert which is made with fresh mangoes or canned mango pulp. Kesari as it is called in South India, is very similar to sooji halwa in North India. It is an Indian sweet dish made with mangoes, semolina, sugar and garnished with raisins and nuts. The making of mango sheera is very similar to the regular semolina sheera. The only difference is that mango pulp is added to it which gives a nice flavour and colour to the sheera. You can add mango pieces or mango pulp or a combination of mango pieces and mango pulp according to the taste desired. Anyways the end result is very delicious and tasty.

INGREDIENTS
Semolina/rava – 1/2 cup
Mango pulp – 1/2 cup
Sugar – 1/2 cup
Water – 1 and 1/2 cups
Cardamom powder – 1/4 teaspoon
Ghee – 1/4 cup
Cashewnuts – 10 nos.
Raisins – 10 nos.
HOW TO MAKE OR PREPARE MANGO KESARI RECIPE
In a pan, add 2 tablespoons of ghee and stir fry the cashew nuts and raisins till light brown and set aside. To the same pan, add the semolina and roast them on a low flame.
Fry the semolina till it leaves a nice aroma. Keep it aside.
Heat 1 and 1/2 cups of water till it comes to a nice boil. Heat another 2 tablespoons of ghee to the same pan.
Add the mango puree or pulp and stir fry for few seconds. Add the roasted semolina and mix well. Cook on a low flame for a minute, till the mango pulp is blended well with the semolina.
Now add 1 and 1/2 cups of boiling water to the rava-mango mixture and mix well. Cook on a low flame by stirring continuously. Ensure that no lumps are formed. The water will be absorbed by the rava and the mixture will start thickening.
Once the rava is fully cooked and water is fully absorbed, add the sugar and mix well. The mixture will become watery. Keep cooking on a low flame for 2-3 minutes.
Once the sugar is well absorbed by the mixture, add the remaining ghee, fried nuts and cardamom powder. Mix well. Switch off the flame.
Garnish with chopped mango pieces and fried nuts and serve.
NOTES/TIPS
Ensure that the mangoes are not fibrous.
Adjust sugar as per your sweet taste required.
You can add milk instead of water. It makes the kesari more rich in taste.
Use sweet ripe mangoes for making kesari.
You can add few drops of rose water to the sugar syrup for a more enhanced flavor.
