Lauki also called as bottlegourd or dudhi is light green in colour and usually in the shape of a bottle.  Apart from the iron content it is also rich in vitamin B and C  and helps in anti-oxidative actions.  Its fat and cholesterol content is extremely low.  Bottle gourd is rich in dietary fibre and it is also easy to digest.  Lauki halwa or dudhi ka halwa is a very popular Indian dessert, especially in North India.  For this recipe, condensed milk is used to make the halwa. It can be easily prepared at home in less than half an hour.  You can make this halwa for any special occasion or during winters.  Do try this instant halwa which can be enjoyed at any time of the day or any time of the year.

INGREDIENTS

Lauki/dudhi/bottlegourd – 3 cups (finely grated)

Milk – 3/4 cup

Sweetened condensed milk – 100 gms (I used Nestle milkmaid)

Cardamom powder – 1/2 teaspoon

Ghee – 2 tablespoons

Cashewnuts – 7-8 nos

Raisins – 10 nos

HOW TO MAKE OR PREPARE DUDHI/LAUKI HALWA RECIPE

Heat 2 tablespoons of ghee in a pan. Add cashewnuts and raisins and fry till light brown in colour.   Remove them in a plate.  To the same pan, add the grated lauki and saute for few minutes.

Add milk and cover the pan with its lid.  Cook till the lauki becomes soft.

Add the sweetened condensed milk and mix well.  Keep stirring continuously till the mixture becomes little thick.

Add cardamom powder and fried nuts.  Mix well.  Once the mixture leaves the sides of the pan and becomes thick, switch off the flame

Delicious halwa is ready to be served.  Serve it hot or warm as desired.

NOTES/TIPS

You can add 1/4 tsp of green food  colour to give a nice colour to the halwa.

Use medium sized lauki to make halwa.

Use grated lauki immediately to make halwa.  Otherwise it turns brown fast.

Ensure to cook lauki well, before adding the condensed milk.  Once the condensed milk is added, lauki will not get cooked.
