Mixed vegetable curry recipe
Mixed vegetable curry is a very delicious and nutritious curry prepared from various combo of vegetables and mild spices. It is not only a colourful but also a healthy dish. This curry can be made with freshly available seasonal vegetables. It goes well as a side dish for rotis, chapatis or rice. Mixed vegetable curry is very quick and easy dish to make that has the goodness of your favourite veggies.

INGREDIENTS
Cauliflower florets – 1 cup
1 carrot – chopped into small pieces
1 capsicum – cut into half inch cubes
French beans – 10 (cut into small pieces)
Tomato puree – 1/2 cup
Milk – 1 cup
Cooking oil – 3 tablespoons
Salt to taste
GRIND TO A PASTE
Onions – 2 (chopped roughly)
Garlic flakes – 4
Half inch ginger
Cloves (laung) – 2
Cardamom (chhoti elaichi) – 1
Cumin (jeera) powder – 1/2 teaspoon
Coriander powder – 1 teaspoon
Garam masala powder – 1 teaspoon
Red chilli powder – 1/2 teaspoon
HOW TO MAKE OR PREPARE MIXED VEGETABLE CURRY RECIPE
Boil the cauliflower florets, french beans and carrot with sufficient water. Once boiled, drain the water and keep the boiled vegetables aside.
Grind together all the ingredients with little water under ‘GRIND TO PASTE’. Set the paste aside.
Heat oil in a pan. Add the paste and saute on a low flame till the raw smell of the onion goes away.
Add the tomato puree and salt and mix well. Cook for 2-3 minutes till all the ingredients are blended well to a nice gravy.
Now add the boiled vegetables and chopped capsicum. Mix well.
Cook for another 4-5 minutes on a low flame. Then add milk and mix well. Cook for another 2 minutes on a low flame.
Switch off the flame and transfer the curry to a serving dish.
Serve mixed vegetable curry hot with rotis, naans, chapatis or rice as desired.
NOTES/TIPS
You can also add paneer pieces to further enhance the taste.
Add green peas or any seasonal vegetables available to make it more healthy.
