HOW TO MAKE OR PREPARE EGGLESS CHOCOLATE COOKIES RECIPE

In a mixing bowl, add butter and powdered sugar and whisk well till soft and creamy.

You can also whip it with an electric whisker till it becomes light and well combined.  Add few drops of vanilla essence to it.

Whisk well again.   Place a sieve on the mixing bowl.  Add 1 and 1/2 cups maida, 1/4 cup cocoa powder, 1/2 tsp baking powder and a pinch of salt.  Now sieve all the ingredients into the bowl.

With the help of a spatula mix them gently and bring together to form a dough.  Add 1 to 2 tablespoons of milk, if required, to make the dough.  Make a soft dough, but do not knead the dough.

Keep the dough covered and refrigerate for 15 minutes.

Preheat the oven at 180 degree C for 10 minutes.  Take a small portion of the dough and roll them into small balls.  Flatten them with your palms.  Place the cookies with enough space between them, as they tend to swell a bit.

If you want a thinner cookie, you can flatten little more.  I wanted a thicker cookie, hence I flattened it accordingly.

Bake the cookies for 20-25 minutes.  After 15 minutes, check the cookies if it is baked.  Once done, remove the cookies to a wire rack and allow it to cool down.

The cookies will be soft at first, but once cooled down completely, will become crisp and crunchy.

NOTES/TIPS

The baking time varies from oven to oven.  Hence keep an eye after 15 minutes and switch off the oven, once the cookies become golden brown.

Do not overbake or else the cookies tend to become harder.

You can replace maida with wheat flour for a healthier version.

Use good quality cocoa powder for better taste of the cookies.

You can also add chopped raisins or walnuts to the cookies.

Sieving the flour to ensure there are no lumps.
