Aloogadde palya or aloo sabzi
Aloo sabzi is a good side dish for rotis and puris. Aloogadde palya is a kannada word for potato vegetable. A spicy vegetable cooked with boiled potatoes and spices.
Ingredients
- Potatoes - 5
- Green chillies - 4 (chopped finely)
- Onions - 2 (chopped finely)
- Turmeric powder - 1/4 teaspoon
- Cumin seeds - 1/2 teaspoon
- Grated ginger - 1/2 teaspoon
- Mustard seeds - 1/2 teaspoon
- Urad dal - 1/2 teaspoon
- A pinch of asafoetida
- A string of curry leaves
- Few coriander leaves
- Lemon juice - 1 teaspoon
- Oil - 4 tablespoons
Method
Step 1
Boil the potatoes with sufficient water and cut the boiled potatoes into medium sized cubes and keep it aside.
Step 2
Heat oil in a pan. Add mustard seeds Allow it to splutter.
Step 3
Add asafoetida, urad dal, curry leaves and cumin seeds. Stir fry till urad dal turns golden.
Step 4
Add green chillies, grated ginger and chopped onions. Fry till onions turn light brown.
Step 5
Add potato cubes, turmeric powder, salt and little water and mix well. Mash the potatoes cubes lightly.
Step 6
Cook on a medium flame with the lid closed for 5 minutes till the potatoes get blended with the spices.
Step 7
Switch off the flame. Add lime juice and garnish with coriander leaves.
Step 8
Serve hot with puris or rotis.
