Wheat rava is also called as broken wheat or godhumai rava or dalia.  Pongal is a popular south indian harvest festival dedicated to the Sun God.  This sweet pongal is made with wheat rava which also tastes as good as regular sweet pongal. Wheat rava pongal is different from the regular pongal and is very healthy.  Do try this tasty version of pongal this festival season and enjoy!!

INGREDIENTS

Wheat rava – 1/2 cup

Yellow moong dal – 2 tablespoons

Powdered jaggery – 3/4 cup

Ghee – 4 tablespoons

Cardamom powder – 1/4 teaspoon

A pinch of salt

Cashewnuts – 10

Raisins – 10

Water – 2 cups

HOW TO MAKE OR PREPARE WHEAT RAVA SWEET PONGAL RECIPE

Heat 2 tablespoons of ghee in  a small pressure cooker.  Add the cashewnuts and roast until golden colour.  Then add raisins and stir fry till they puff up.  Remove them in a plate and keep it aside.  Now add the wheat rava and roast for a minute on medium flame.  Set aside.

Now add the moong dal and fry till light golden in colour.  Remove the roasted moong dal to the same plate.

Mix them and add them to the same pressure cooker. Add 2 cups of water and a pinch of salt.  Close the pressure cooker with its lid and pressure cook for 3 to 4 whistles.

Meanwhile add 1/4 cup of water and 3/4 cup of jaggery in a separate vessel and bring it to a boil. Then switch off the flame.

Once the pressure is cooled down, open the cooker and mix the cooked wheat rava and moong dal.  Add 1 tablespoon of ghee and give a good mix.

Add the jaggery syrup directly to the cooked rava and moong dal, through a strainer to remove the impurities if any.

Cook on a low flame till it blends with the jaggery syrup and it becomes thick.  Add another 1 tablespoon of ghee and mix well.

Lastly add cardamom powder and fried nuts and raisins.  Combine everything well.  Switch off the flame.

Delicious and healthy sweet pongal is ready to be served.

NOTES/TIPS

Adjust the jaggery according the sweet taste required by you.

You can add cloves to enhance the flavor.

Add jaggery syrup after the wheat rava is fully cooked.

It stays well for 2-3 days in an airtight container.
