Pepper rice recipe – how to make pepper flavoured rice – Indian rice recipes

Pepper rice is a delicious pepper flavoured rice made with cooked rice, pepper corns, cumin seeds and ghee.  Black peppercorns gives a nice and authentic flavour to this rice. Black pepper is an  excellent source of manganese, vitamin K,  copper and dietary fiber, iron, chromium, and calcium. The health benefits of black pepper include relief from respiratory disorders, coughs, the common cold, constipation, indigestion and  anemia.  Pepper rice is a popular Andhra delicacy and is had as a one-pot meal.  It is not only simple and easy to make, but even quick to make it as the ingredients required is easily available at home at all times.  Do try this pepper flavoured rice and have it hot with papads, raita, any curry or even rasam or just plain.

Servings :  2 persons

INGREDIENTS

Cooked rice – 1 cup

Ghee – 4 teaspoons

Urad or udid dal – 1/2 teaspoon

Chana dal or Bengal gram – 1/2 teaspoon

Cashewnuts – 7 to 8

Onion – 1 (small sized) (chopped finely)

Few curry leaves

Salt to taste

TO GRIND TO A COARSE POWDER

Black peppercorns – 10 to 12

Cumin seeds (jeera) – 2 teaspoons

HOW TO MAKE OR PREPARE PEPPER FLAVOURED RECIPE

Heat 2 teaspoons of ghee in a pan on medium flame.  Add urad dal and chana dal and saute til light brown.  Add cashewnuts and saute till they become golden brown in colour.

Add chopped onions and cook till they become translucent.  Meanwhile grind the black pepper and cumin seeds to a coarse powder and keep it aside

Once the onions turn light brown in colour, add the cooked rice and salt and mix well.

Add the ground pepper-cumin powder and give a good mix.  Check for salt and add if required.  Add the remaining 2 teaspoons of ghee and mix everything well

Pepper flavoured rice is ready to be served.  Transfer to a serving plate and serve hot as it is or with papads or chips or any curry.

NOTES/TIPS

Ghee gives a nice flavour to pepper rice.  Do not miss adding ghee to the rice.

Ensure that the cooked rice is not too mushy and grains are separate from each other.

You can also use basmati rice instead of regular rice for an enhanced taste and flavour.

Adjust the peppercorns according to the spiciness required by you.

Use only freshly ground peppercorns and cumin seeds, if you want to enjoy the flavour of this rice.
